Caramelized Onion and Feta Flatbreads

SERVES 4

MEATLESS

Onions and feta cheese are each packed with flavor, and when combined, they really bring it. No boring pizza here! And yes, greens on a pizza are fantastic. Trust me! This is a pizza you can feel good about.

1 tablespoon olive oil

½ medium onion, sliced

1½ teaspoons soy sauce

Fine sea salt and freshly ground black pepper

4 pita breads

2 cups baby “power greens” (or a mixture of chard, spinach, and/or kale)

2 medium tomatoes, chopped

½ cup crumbled feta cheese

2 cups shredded Monterey Jack or mozzarella cheese

Preheat the oven to 475°F.

In a large nonstick skillet, heat the oil over medium-high heat until shimmering. Add the onion and sauté until tender, about 5 minutes. Add the soy sauce, turn the heat to low, cover, and cook for another 5 minutes. Season to taste with salt and pepper.

Lay out the pita breads on a baking sheet. Divide the greens among the four breads. Top with the onion, tomatoes, feta cheese, and Jack cheese.

Bake until the toppings are hot and the cheese is melted and browned in spots, about 8 minutes.
